Production Model Based on Lean Tools and SLP to Increase Labor Productivity in Companies in the Food Industry

The Peruvian food industry plays a crucial role in the country’s economy, but it faces major challenge form of low labor productivity. This problem not only hinders industry’s growth also negatively impacts company profits. study proposes model for improvement using SLP and Lean tools to address underlying causes productivity company. objective this research is enhance achieve or surpass standards by proving effectiveness proposed model. In manner, implemented mitigate lack order storage, 5S inappropriate location Poka Yoke reduce generation waste. To validate model, pilot test was conducted Yoke, while Arena Simulator software used SLP. results were positive, showing 25.02 Kg/Sol, 3.19% reduction standard time per box cinnamon that went through processes cleaning packaging, waste 54.17%, 55.02% an overall 5.35%.
